Recently, Kevin and I had the opportunity to dine at Figaredo's in Abingdon, VA. We heard through the grapevine that Figaredo's offers gluten free pasta. I checked out their website and didn't see any information about gluten free options, so I decided to give them a call. After speaking with the staff, I was assured they could accommadate my diet.   

We decided to take the plunge and make reservations to celebrate our anniversary.
I took a sigh of relief when we arrived and saw gluten free options noted on the regular menu.
Being a slightly obsessed foodie, I did a little homework before leaving home. During my research,
I discovered Naomi and Santiago Figaredo, owners of 
Figaredo's are fellow instructors for the
SWVA Higher Education Cooking School.

A couple of appetizer options on the menu were gluten free. We decided to skip the salad and order the Tuna Carpaccio. I'm such a pushover for anything with tuna, fresh tuna that canned tuna please. The tuna was sliced paper thin and literally melted in my mouth. The dish was complemented with orange citrus, peppery arugula and sesame. We discovered in fact,
they do offer gluten free pasta with many sauce options as well.
But, for this dinner we decided on something different.

Kevin selected the Veal Saltimboca for his entree. The veal was paired with roasted potatoes and topped with fresh mozzarella. their anything better the fresh mozzarella? Kevin throughly enjoyed the veal, as did I. Of course, I had to have a little taste of his entree as well!

During my research, I realized one of the cooking school classes taught by their chef was a Risotto Class. You know, if you're teaching people how to do something, you must be good at it....right? So, I decided to order the Seafood Risotto and I'm thankful I did. Upon the first bite of Risotto I was in heaven. I"ll admit, I've tried to make risotto in the past. My attempt at risotto did not even resemble Figaredo's Seafood Risotto. The rice was cooked perfectly, not too soft, but creamy and delicious. The richness of the sauce was amazing when paralleled with the natural saltiness of the seafood. Kevin also loved the Seafood Risotto.
We both agreed that this dish was probably one of the best things we've ever eaten. 

Thank you Fiagredo's for an anniversary we'll always remember.
